Red curry sauce

  • 8 dried long red chillies, soaked
  • 1 red capsicum, roughly chopped
  • 2 stalkslemongrass, tender centre
  • 30 gfresh ginger
  • 4 clovesgarlic
  • 1 tspsmoked paprika
  • 2 tspground coriander
  • 2 tbspextra virgin olive oil
  • 400 mlfull-fat coconut milk
  • 2 tbsplime juice

Make the red paste

Drain chillies and blend with capsicum, lemongrass, ginger, garlic, paprika, coriander and oil into a coarse paste.

Fry until brick red

Cook paste over medium heat for 6 minutes, scraping often, until deep red and fragrant.

Simmer gently

Add coconut milk and 100 ml water. Simmer for 8 minutes, then season with lime and salt.

Match it to dinner

Use with chicken, duck, fish, tofu or vegetables. Freeze in 250 ml portions for fast dinners.
