Dry the skin
Pat the fish very dry, season both sides and heat a wide heavy pan.

Crisp-skinned barramundi, properly charred broccolini and sharp lemon butter in a fast low-carb dinner that does not need a cream bath.

Barramundi rewards restraint. Dry the skin, leave it alone in a hot pan and build the sauce only after the fish is resting.
Tick each step as you go. Built-in timers keep the important moments close.
Pat the fish very dry, season both sides and heat a wide heavy pan.
Cook broccolini in olive oil over medium-high heat for 5 to 6 minutes, turning only when dark patches appear.
Place fish skin-side down and press for 20 seconds. Cook untouched for 5 to 7 minutes until crisp, then turn for 1 to 2 minutes.
Rest fish skin-side up. Brown butter lightly with capers, remove from heat and add lemon. Spoon over fish and broccolini with parsley.
