  • 400 gbroccolini, trimmed
  • 80 gunsalted butter
  • 1 lemon, zest and juice
  • 2 tbspcapers, drained
  • 20 gflat-leaf parsley

Dry the skin

Pat the fish very dry, season both sides and heat a wide heavy pan.

Char the broccolini

Cook broccolini in olive oil over medium-high heat for 5 to 6 minutes, turning only when dark patches appear.

Cook skin-side down

Place fish skin-side down and press for 20 seconds. Cook untouched for 5 to 7 minutes until crisp, then turn for 1 to 2 minutes.

Make the sharp butter

Rest fish skin-side up. Brown butter lightly with capers, remove from heat and add lemon. Spoon over fish and broccolini with parsley.
