  • 500 gplain tempeh, torn into rough pieces
  • 3 tbspgochujang
  • 2 tbsptamari
  • 600 gcooked rice
  • 300 gred cabbage, finely shredded
  • 2 Lebanese cucumbers, chopped
  • 2 carrots, cut into ribbons
  • 60 mllime juice

Steam the tempeh

Steam tempeh for 8 minutes, then let it dry for 3 minutes.

Mix the glaze

Whisk gochujang, tamari, maple syrup, grated ginger and sesame oil.

Roast until sticky

Toss tempeh with glaze and roast at 220°C for 14 to 17 minutes, turning once.

Build the bowls

Massage cabbage and carrot with lime, fold in cucumber and serve with rice and hot tempeh. Scatter sesame and green tops.
