Green curry sauce

  • 80 gcoriander leaves and stalks, roughly chopped
  • 2 stalkslemongrass, tender centre sliced
  • 30 gfresh ginger, roughly chopped
  • 3 clovesgarlic
  • 2 green chillies
  • 1 lime zest and juice
  • 1 tspground cumin
  • 2 tbspextra virgin olive oil
  • 400 mlfull-fat coconut milk
  • 1 tbspgluten-free tamari

Blitz the paste

Blend coriander, lemongrass, ginger, garlic, chilli, lime zest, cumin and oil into a rough wet paste. Tiny herb flecks are welcome.

Cook out the raw edge

Scrape into a saucepan and cook over medium heat for 4 minutes until fragrant and darker in patches.

Turn it into sauce

Add coconut milk and tamari. Simmer gently for 6 minutes, then add lime juice. Keep it textured or blend briefly for smoother sauce.

Use or store

Spoon through chicken, tofu, prawns or roasted vegetables. Cool quickly and refrigerate for up to 4 days.
