Blitz the paste
Blend coriander, lemongrass, ginger, garlic, chilli, lime zest, cumin and oil into a rough wet paste. Tiny herb flecks are welcome.

Fresh coriander stalks, lemongrass, ginger and lime do the heavy lifting. Frying the paste before adding coconut milk removes the raw edge and concentrates the flavour.

Scrape into a saucepan and cook over medium heat for 4 minutes until fragrant and darker in patches.
Add coconut milk and tamari. Simmer gently for 6 minutes, then add lime juice. Keep it textured or blend briefly for smoother sauce.
Spoon through chicken, tofu, prawns or roasted vegetables. Cool quickly and refrigerate for up to 4 days.
