  • 1 red capsicum, diced

  • 800 gcrushed tomatoes
  • 400 mlvegetable stock
  • 8 large eggs
  • 25 gflat-leaf parsley

Soften the base

Cook onion and capsicum for 7 minutes until soft and browned at the edges.

Bloom the spices

Add garlic, cumin, coriander and smoked paprika for 45 seconds.

Cook the lentils thick

Add lentils, tomatoes and stock. Simmer uncovered for 16 to 20 minutes.

Set the eggs

Make eight wells, crack in eggs, cover and cook over low heat for 6 to 9 minutes. Finish with lemon and parsley.
