Crust

  • 120 grolled oats
  • 120 groasted almonds
  • 180 gMedjool dates, pitted
  • 20 gcacao powder

Mousse

  • 600 gsilken tofu, drained
  • 300 g85% dark chocolate
  • 2 tspvanilla extract
  • 1 pinchfine sea salt

Make the rough crust

Pulse oats and almonds to coarse crumbs. Add dates and cacao, then pulse until the mixture clumps. Press into a lined 22 cm tin with uneven natural texture.

Melt the chocolate gently

Melt chocolate over barely simmering water and cool for 5 minutes.

Blend the mousse

Blend tofu, chocolate, vanilla and salt for 60 to 90 seconds until silky, scraping once.

Chill until sliceable

Spoon over the crust, leave a soft swirl and chill for at least 4 hours before cutting.
