Orzo

  • 320 gorzo pasta
  • 800 gcannellini beans, drained
  • 900 mlvegetable stock
  • 3 clovesgarlic
  • 180 gbaby spinach
  • 1 lemon zest and juice
  • 40 gnutritional yeast

Mash some beans

Mash one-third of the beans roughly with a fork, leaving plenty of texture.

Toast the orzo

Cook garlic in olive oil for 30 seconds. Add orzo and stir for 2 minutes.

Simmer together

Add stock, mashed beans and whole beans. Simmer for 12 to 14 minutes, stirring often.

Finish off the heat

Fold through spinach, lemon and nutritional yeast. Rest for 3 minutes before serving.
