Falafel

  • 300 gdried chickpeas, soaked overnight and drained
  • 80 gparsley and coriander
  • 2 clovesgarlic
  • 2 tspground cumin
  • 40 gchickpea flour
  • 3 tbspextra virgin olive oil

Bowls

  • 600 gcooked quinoa
  • 1 cucumber, roughly chopped
  • 3 tomatoes, cut into rough wedges
  • 180 mllemon tahini sauce

Keep the mixture coarse

Pulse chickpeas, herbs, garlic, cumin, chickpea flour and salt until pebbly and able to hold when squeezed.

Shape rough rounds

Form 16 uneven falafel with damp hands. Brush generously with oil.

Bake and turn

Bake at 220°C for 15 minutes, turn and bake for 8 to 10 minutes more until deeply golden.

Build loose bowls

Divide quinoa, cucumber and tomato. Add falafel and spoon over tahini without arranging everything into sections.
