Curry

  • 300 gred lentils, rinsed
  • 1 brown onion, roughly diced
  • 3 clovesgarlic
  • 30 gfresh ginger, grated
  • 1 tbspground cumin, coriander and turmeric
  • 400 gcrushed tomatoes
  • 400 mlcoconut milk
  • 500 mlvegetable stock
  • 150 gbaby spinach
  • 2 tbsplime juice

Build the base

Cook onion in 1 tablespoon olive oil for 5 minutes. Add garlic, ginger and spices for 1 minute.

Simmer the lentils

Add lentils, tomato, coconut milk and stock. Simmer uncovered for 20 to 24 minutes, stirring often.

Keep some life in it

Fold through spinach just until wilted. Add lime and salt.

Rest before serving

Stand for 5 minutes so the curry thickens naturally. Add water if reheating.
