Pudding

  • 260 gpitted Medjool dates, roughly chopped
  • 300 mlboiling water
  • 1 tspbicarbonate of soda
  • 190 gwholemeal spelt flour
  • 45 gunsweetened cacao powder
  • 1 tspbaking powder
  • 180 mlunsweetened oat milk
  • 60 mlextra virgin olive oil

Date sauce

  • 120 gpitted Medjool dates
  • 220 mlboiling water
  • 1 tspvanilla extract
  • 1 pinchfine sea salt

Soften the dates

Heat the oven to 180°C. Cover chopped pudding dates with boiling water, stir in bicarbonate of soda and leave for 10 minutes.

Keep some pieces

Mash the date mixture roughly with a fork. Whisk in oat milk and oil, leaving visible date fragments.

Fold the batter

Combine flour, cacao, baking powder and salt. Fold in the wet mixture just until no dry flour remains. Scrape into a greased 20 cm dish.

Bake until tender

Bake for 30 to 35 minutes until the centre springs back but a skewer carries a few moist crumbs.

Blend and pour

Blend sauce dates, boiling water, vanilla and salt until glossy. Spoon warm sauce unevenly over rough portions of pudding.
