Dry with intent
Heat the oven to 220°C. Spread chickpeas on a clean tea towel, rub gently to dry them and discard only the skins that release easily.

Crisp, paprika-darkened chickpeas with cracked centres, lemon zest and enough salt to make them genuinely snackable. Cheaper and better textured than a packet of beige puffs.

Partly crushing the chickpeas exposes rough edges that roast faster while leaving enough whole ones for a creamy middle. Drying them properly matters more than adding another spoon of oil.

Tip onto a tray and press roughly one-third with the base of a mug. Leave irregular cracks rather than flattening every chickpea.
Toss with oil, paprika, cumin and salt. Roast for 22 to 27 minutes, turning once, until the cracked pieces are crisp and the whole chickpeas blister.
Toss with lemon zest immediately. Cool for 5 minutes, then squeeze over lemon just before eating.
