Roast for real sweetness
Heat the oven to 220°C. Roast tomatoes, onion, garlic and ginger with 1 tablespoon olive oil for 25 minutes until collapsed and charred at the edges.

Roasted tomato, ginger, spices and a measured finish of butter make a proper sauce without a packet or sugar dump.

Roasting the tomatoes first builds sweetness through heat, not syrup. Yoghurt brings tang and butter rounds the spices without turning dinner into cream soup.

Melt half the butter in a saucepan. Cook garam masala and paprika for 30 seconds.
Blend roasted vegetables until smooth, add to the spices and simmer for 6 minutes.
Remove from heat. Whisk in yoghurt and remaining butter. Return to very low heat without boiling.
