Tomatoes split when they are ready, not when the rest of the skewer looks tidy. Use mixed sizes and thread them beside thick torn mushroom pieces so the result is juicy, savoury and naturally irregular.

  • 600 gportobello mushrooms, torn into large pieces
  • 400 gmixed cherry tomatoes
  • 3 tbspextra virgin olive oil
  • 2 tbspbalsamic vinegar
  • 1 tbspgluten-free tamari
  • 1 tbspfresh thyme leaves
  • 1 clovegarlic, finely grated

Tear the mushrooms

Remove tough stems and tear portobellos into varied, sturdy pieces. Keep some natural curved cap edges.

Make a light marinade

Whisk oil, balsamic, tamari, thyme and garlic. Toss through mushrooms and tomatoes for 10 minutes.

Thread gently

Build eight loose skewers. Pierce tomatoes through the stem end and give mushroom pieces enough room to lose moisture.

Cook until the tomatoes decide

Barbecue over medium-high heat for 8 to 10 minutes, turning carefully, until mushrooms are browned and some tomatoes split.

Use the resting juices

Rest on a rimmed platter for 3 minutes, then roll the skewers through the balsamic mushroom juices before serving.
