Tempeh

  • 600 gplain gluten-free tempeh, cut into varied chunks
  • 2 tbspgluten-free tamari
  • 1 tbsppure maple syrup
  • 1 tbspneutral cooking oil
  • 1 lime, zested and juiced

Satay sauce

  • 120 gnatural crunchy peanut butter
  • 120 mlcoconut milk
  • 1 tspfresh ginger, grated
  • ½ tspchilli flakes

Steam the tempeh

Steam the tempeh pieces for 8 minutes, then spread them out to release surface moisture.

Season while warm

Toss with tamari, maple, oil, lime zest and half the juice. Leave for 10 minutes while the barbecue heats.

Make a textured sauce

Warm peanut butter, coconut milk, ginger and chilli gently, stirring until spoonable. Add water only if needed and keep the peanut pieces visible.

Char the rough edges

Thread tempeh onto eight skewers. Cook over medium-high heat for 7 to 9 minutes, turning as each craggy face browns.

Sauce at the table

Finish with remaining lime juice and serve the warm satay sauce alongside so the char stays intact.
