Glazed tofu and eggplant skewers with uneven charred edges and sesame

Pressing tofu helps, but tearing it is what creates the best edges. The irregular surfaces hold more glaze than neat cubes, while small Japanese eggplants soften at roughly the same pace over a medium-hot grill.

Skewers

  • 600 gextra-firm tofu, drained and torn into chunks
  • 500 gJapanese eggplants, cut into uneven pieces
  • 2 tbspneutral cooking oil

Miso glaze

  • 3 tbspgluten-free white miso
  • 2 tbspgluten-free tamari
  • 2 tbsppure maple syrup
  • 2 tspfresh ginger, grated
  • 1 tbsprice vinegar
  • 1 tbspsesame seeds

Press, then tear

Wrap tofu in a clean tea towel and press under a tray for 15 minutes. Tear into varied chunks with plenty of rough surface.

Mix the glaze

Whisk miso, tamari, maple, ginger and vinegar. Reserve one-third in a clean bowl for finishing.

Start with oil

Toss tofu and eggplant with oil, then thread onto eight skewers. Barbecue over medium heat for 7 minutes before adding glaze.

Glaze late

Brush with cooking glaze and cook for another 5 to 7 minutes, turning carefully, until eggplant is tender and the rough tofu edges are dark.

Finish with contrast

Spoon over the reserved glaze and scatter sesame loosely across the hot skewers.
