This is a proper plant-based barbecue main, not a side salad promoted beyond its experience. Whole cobs develop scattered char, beans bring substance and avocado is broken in at the end so the bowl stays varied and satisfying.

  • 4 corn cobs, husks removed
  • 480 gcanned black beans, drained and rinsed
  • 2 ripe avocados
  • 300 gred cabbage, finely shredded
  • 1 red capsicum, quartered
  • 2 tbspextra virgin olive oil
  • 1 tspground cumin
  • 2 limes, zested and juiced
  • 1 cupcoriander leaves, roughly torn

Start the slaw

Scrunch cabbage with half the lime juice and a pinch of salt for 30 seconds. Leave it to soften while the barbecue heats.

Char whole vegetables

Rub corn and capsicum with half the oil. Barbecue over medium-high heat for 10 to 12 minutes, turning only as new patches blister.

Warm the beans

Heat beans with remaining oil, cumin, lime zest, 2 tablespoons water and a pinch of salt until glossy and warm.

Cut without perfecting

Slice corn from the cobs in varied sheets and loose kernels. Roughly chop the charred capsicum and break avocado into spoon-sized pieces.

Layer loosely

Divide slaw and beans between bowls. Add corn, capsicum and avocado in loose handfuls, then finish with remaining lime and torn coriander.
