Cauliflower bowls only work when the brassica is roasted hard enough to taste nutty. Cut the florets at different natural angles so flat faces hit the tray and brown while smaller edges become crisp.

  • 900 gcauliflower, cut into varied florets
  • 3 tbspextra virgin olive oil
  • 2 tspground cumin
  • 500 gcooked green lentils, drained
  • 2 Lebanese cucumbers, roughly chopped
  • 1 cupflat-leaf parsley, torn

Tahini sauce

  • 100 ghulled tahini
  • 60 mllemon juice
  • 1 clovegarlic, finely grated
  • 80 mlcold water

Use every flat edge

Heat the oven to 230°C with two trays inside. Toss cauliflower with oil, cumin and salt, then spread it across the hot trays.

Roast hard

Roast for 24 to 28 minutes, turning the larger pieces once, until deeply browned in uneven patches.

Wake up the lentils

Warm the lentils in a small pan with 2 tablespoons water, a pinch of salt and a squeeze of lemon.

Loosen the tahini

Stir tahini, lemon and garlic. It will seize; add cold water a spoon at a time until it falls from the spoon in a thick ribbon.

Build, do not arrange

Spoon lentils into bowls, add cauliflower and cucumber in loose handfuls, then pour over tahini and tear parsley across the top.
