A cauliflower only yields two or three true centre steaks. Grill those intact and cook the naturally broken side florets beside them, because forcing every piece into a matching slab wastes food and looks less appetising.

Cauliflower

  • 1 large cauliflower
  • 3 tbspextra virgin olive oil
  • 1 tspsmoked paprika
  • 1 lemon, halved

Romesco

  • 300 groasted red capsicum, drained
  • 80 groasted almonds
  • 60 gsun-dried tomatoes
  • 1 tbspsherry or red wine vinegar
  • 1 clovegarlic

Cut honestly

Trim the leaves but keep the core. Cut two or three 3 cm centre steaks and gather the side florets rather than discarding them.

Give the centre a head start

Steam the steaks and large florets for 5 minutes, then dry thoroughly. Brush with oil, paprika and salt.

Pulse a rough romesco

Pulse capsicum, almonds, tomatoes, vinegar and garlic until coarse and spoonable. Add 1 tablespoon olive oil and season.

Barbecue on both faces

Cook cauliflower over medium-high heat for 6 to 8 minutes a side, shifting smaller florets sooner, until deeply charred and tender.

Spoon, do not stripe

Spread romesco loosely on a platter, settle the cauliflower into it and squeeze over the charred lemon halves.
