Make two banana textures
Heat the oven to 185°C. Mash two bananas in a large bowl. Tear the third into irregular bite-sized chunks.

Whisk oat milk, half the tahini and maple into the mashed banana. Fold in oats, baking powder, cinnamon and a pinch of salt.
Fold through most of the banana chunks and berries with two or three broad turns. Scrape into a greased 20 x 28 cm baking dish.
Dot with remaining fruit, pumpkin seeds and tahini. Drag a spoon through once or twice—do not make a perfect swirl.
Bake for 32 to 36 minutes until browned at the edges but still tender in the middle. Rest for 10 minutes before spooning.
