Par-cook the potatoes
Simmer sliced potatoes for 6 minutes, then drain and steam-dry.

Whisk eggs, milk, most cheddar and chives. Pour into the pan and cook over low heat for 4 minutes.
Scatter remaining cheddar and bake at 190°C for 10 to 13 minutes. Rest before slicing.
