  • 650 gbaby potatoes, cut into 5 mm slices
  • 1 largeleek, washed and thinly sliced
  • 10 large eggs
  • 120 mlfull-cream milk
  • 180 gmature cheddar, grated
  • 20 gchives, snipped

Par-cook the potatoes

Simmer sliced potatoes for 6 minutes, then drain and steam-dry.

Build the crisp layer

Brown potatoes in an ovenproof pan for 7 minutes, then add leek for 5 minutes.

Add the eggs

Whisk eggs, milk, most cheddar and chives. Pour into the pan and cook over low heat for 4 minutes.

Bake to a soft centre

Scatter remaining cheddar and bake at 190°C for 10 to 13 minutes. Rest before slicing.
