Start in the oven
Heat the oven to 190°C. Season pork with salt and spread on a rack over a lined tray, leaving natural gaps.

Simmer tamari, maple, ginger, vinegar and chilli for 3 to 4 minutes until lightly syrupy.
Toss pork with two-thirds of the glaze. Barbecue over medium-high heat for 6 to 8 minutes, turning each piece as it blisters.
Pile onto a dark platter and spoon over the remaining glaze. Rest for 5 minutes before eating.
