Cook the vegetables
Heat the oven to 190°C. Cook onion in oil for 5 minutes. Add spinach by handfuls and cook only until wilted. Cool slightly.

Whisk eggs, milk, lemon zest, salt and black pepper until combined but not foamy.
Add spinach mixture, beans, dill and two-thirds of the feta. Fold just enough to distribute without crushing the beans.
Pour into a greased 20 x 28 cm dish. Break the remaining feta across the surface in differently sized pieces.
Bake for 28 to 33 minutes until the edges are golden and the centre has only a slight wobble. Rest for 10 minutes before cutting.
