Wilt and cool
Heat the oven to 200°C. Wilt spinach in 1 teaspoon oil, squeeze out excess moisture and chop roughly. Cool for 5 minutes.

Butterfly each breast according to its natural shape rather than cutting a ruler-straight pocket. Some filling should stay tucked in while a little escapes and browns into the pan juices, which is exactly where the character lives.

Slice each breast horizontally to form a deep pocket, following its shape and not cutting all the way through. Fill generously and secure loosely with toothpicks.
Rub with remaining oil, paprika and salt. Sear in an ovenproof skillet for 2 minutes a side, then bake for 16 to 20 minutes until cooked through.
Rest for 5 minutes. Spoon the browned juices and any escaped feta over the chicken before serving.
