Koftas should look like they came from two hands, not a mould. Keep the mince cold, mix only until it holds and press each one loosely around its skewer so every ridge catches differently on the barbecue.

Lamb koftas

  • 800 glamb mince
  • 2 clovesgarlic, finely grated
  • 2 tspdried oregano
  • 2 tspground cumin
  • 1 tspground coriander
  • ½ cupflat-leaf parsley, roughly chopped
  • 1 tbspextra virgin olive oil

Lemon yoghurt

  • 200 gthick Greek yoghurt
  • 1 lemon, finely zested and juiced

Mix lightly

Combine lamb, garlic, oregano, cumin, coriander, parsley, oil, 1 teaspoon salt and black pepper. Mix with cool hands just until it holds.

Shape by hand

Divide into eight uneven portions. Press loosely around soaked wooden or metal skewers, leaving thumbprints and rough ridges. Chill for 10 minutes.

Make the yoghurt

Stir yoghurt with lemon zest, half the juice and a pinch of salt. Keep the surface loose rather than perfectly smooth.

Barbecue hard and fast

Heat a lightly oiled barbecue plate or grill to medium-high. Cook koftas for 8 to 10 minutes, turning three or four times, until charred outside and cooked through.

Rest and serve

Rest for 3 minutes, then pile the koftas beside the lemon yoghurt and squeeze over the remaining lemon.
