Brisket

  • 2 kgbeef brisket, fat cap left on
  • 2 tspfine sea salt
  • 2 tspcoarsely cracked black pepper
  • 2 tspsmoked paprika
  • 1 tspground cumin
  • 2 tbspgarlic-infused olive oil
  • 2 tbsptomato paste
  • 500 mlgluten-free beef stock
  • 2 tbspapple cider vinegar
  • 1 tbspgluten-free tamari

Season without being timid

Pat brisket dry. Mix salt, pepper, paprika and cumin, then rub it over every uneven surface. Rest for 20 minutes.

Build a real bark

Heat oil in a wide heavy pan. Sear brisket for 5 to 7 minutes a side, including the thicker edges, until nearly too dark.

Load the slow cooker

Stir tomato paste into the pan, then add stock, vinegar and tamari. Scrape up every browned bit and pour around the brisket in the slow cooker.

Cook low and slow

Cook on low for 8 hours until a fork twists easily in the thickest part. Start checking at 7 hours because every brisket is shaped differently.

Rest and reduce

Rest the brisket loosely covered for 20 minutes. Skim excess fat, reduce the cooking liquid in a saucepan until glossy, then slice the beef unevenly across the grain.
