Cook salami in a dry frying pan for 3 minutes until the edges curl. Drain on paper and cool slightly.
Whisk eggs, cream, oregano, salt and pepper only until combined. Bubbles make a coarse, soufflé-like texture.
Divide salami, capsicum, cheddar and chives between wells. Pour in egg mixture, stopping 5 mm below the rim.
Bake for 17 to 20 minutes until puffed and barely set in the centre. Rest in the tin for 5 minutes before loosening.
