The fastest route to soggy fritters is finely grating wet zucchini into a smooth batter. Coarse grating, firm squeezing and a loose spoonful give these natural texture and more browned edges.

Fritters

  • 550 gzucchini, coarsely grated
  • 220 gfresh or frozen corn kernels
  • 3 spring onions, roughly sliced
  • 150 gfeta, crumbled
  • 3 large eggs
  • 90 gwholemeal plain flour
  • 3 tbspextra virgin olive oil

Lemon yoghurt

  • 180 gGreek yoghurt
  • 1 lemon, zest and juice
  • ¼ cupdill, roughly torn

Squeeze hard

Salt the zucchini and leave for 10 minutes. Gather it in a clean tea towel and squeeze until no more water drips.

Keep the batter rough

Mix zucchini, corn, spring onion, feta, eggs and flour with black pepper. Stop as soon as the ingredients hold together.

Spoon, do not mould

Heat a thin layer of oil in a wide pan. Drop in loose heaped spoonfuls and nudge only the thickest centres flatter.

Brown both sides

Cook for 3 minutes until the ragged edges are dark gold. Turn once and cook for 2 minutes more. Drain on a rack.

Stir the yoghurt

Roughly stir yoghurt, lemon and dill. Serve beside the hot fritters rather than drawing a neat sauce line over them.
