Roast until wrinkled
Heat the oven to 210°C. Toss beetroot with 2 tablespoons oil, cumin and salt. Roast for 40 to 45 minutes until dark at the edges and tender.

Earthy roast beetroot, toasted walnuts and sharp yoghurt blended into a vivid dip with enough texture to prove it came from food.

Roasting concentrates beetroot and avoids the watery sweetness of boiling. Blend most of the walnuts into the base, then fold the rest through so every mouthful is slightly different.

Add walnuts to a separate tray for the final 7 minutes. Cool, then reserve a rough handful.
Blend beetroot, remaining walnuts, yoghurt, lemon zest, lemon juice and remaining oil until creamy but not perfectly smooth.
Crush the reserved walnuts by hand and fold half through the dip with most of the dill.
Spoon into a bowl, add one broken yoghurt streak and finish with remaining walnuts and dill.
