Beans become far more satisfying when some stay whole and others collapse into the tomato juices. Torn bread is better than machine-fine crumbs here because the varied pieces toast at different rates.

Bean gratin

  • 800 gripe mixed tomatoes, roughly chopped
  • 1 red onion, cut into uneven wedges
  • 3 clovesgarlic, roughly sliced
  • 3 tbspextra virgin olive oil
  • 720 gcanned butter beans, drained
  • 1 cupbasil leaves, torn

Rough crumb

  • 140 gday-old sourdough, torn into rough crumbs
  • 70 gfinely grated parmesan
  • 2 tspfresh thyme leaves
  • 1 tbspextra virgin olive oil

Start the tomatoes

Heat the oven to 220°C. Toss tomatoes, onion and garlic with 2 tablespoons oil and salt in a broad baking dish. Roast for 22 minutes.

Make two bean textures

Stir in the beans, crushing about one-quarter against the side of the dish so they thicken the juices. Fold through most of the basil.

Tear the crumb

Toss sourdough, parmesan, thyme and remaining oil. Leave a mixture of tiny crumbs and larger rough pieces.

Cover without paving

Scatter the crumb loosely over the beans, leaving a few gaps where tomato can bubble through.

Bake to varied gold

Bake for 15 to 18 minutes until the tallest crumbs are dark gold and the edges bubble. Rest for 5 minutes and finish with basil.
