  • 260 gzucchini, coarsely grated65 g per serve
  • 350 gfloury potato, coarsely grated
  • 100 gfinely grated parmesan
  • 2 large eggs
  • 50 gwhite rice flour
  • cupfresh chives, roughly snipped
  • 2 tbspgarlic-infused olive oil
  • 1 lemon wedges

Remove the water

Heat the oven to 220°C. Salt zucchini and potato lightly, wait 8 minutes, then squeeze very firmly in a clean tea towel.

Mix just enough

Fold the vegetables with parmesan, eggs, rice flour, chives and black pepper until the mixture holds when pressed.

Spoon twelve rough bites

Oil a hot tray with infused oil. Drop 12 uneven spoonfuls onto it and press only the thick centres.

Roast to craggy gold

Bake for 12 minutes, turn with a thin spatula and bake for another 7 to 9 minutes until browned at the edges.

Serve in portions

Serve three bites per person with lemon. Cool leftovers on a rack before chilling.
