  • 700 gbeef rump, sliced across the grain
  • 2 tbspgarlic-infused olive oil
  • 2 tbspfresh ginger, grated
  • 3 tbspgluten-free tamari
  • 600 gcooked jasmine rice
  • 4 baby bok choy
  • 2 carrots, cut into ribbons
  • 1 smallred capsicum, thinly sliced
  • ½ cupspring onion green tops

Mix the sauce

Whisk tamari, maple syrup, sesame oil, cornflour and water. Toss beef with ginger and infused oil.

Sear in two batches

Cook beef in two fast batches over high heat, then transfer to a plate.

Keep vegetables crisp

Stir-fry bok choy, carrot and capsicum for 3 to 4 minutes.

Gloss, do not stew

Return beef, add sauce and toss for 60 to 90 seconds. Serve over rice with green tops and sesame.
