Parmesan shells

  • 240 gParmesan, freshly grated

Prawn filling

  • 600 graw peeled prawns
  • 1 tbspextra virgin olive oil
  • 1 tspsmoked paprika
  • 200 gred cabbage, finely shredded
  • 2 limes, zest and juice
  • 1 ripe avocado, roughly mashed
  • 80 gGreek yoghurt
  • ½ cupcoriander leaves, roughly torn

Bake the cheese rounds

Heat the oven to 200°C. Make eight loose 12 cm circles of Parmesan on lined trays. Keep the edges naturally ragged. Bake for 6 to 8 minutes until bubbling and amber.

Shape while warm

Rest for 30 seconds, then drape each flexible cheese round over the handle of a wooden spoon or the ridge of an upturned muffin tin. Cool until crisp.

Make the sharp slaw

Scrunch cabbage with half the lime juice and a pinch of salt. Stir yoghurt and remaining lime into the roughly mashed avocado.

Char the prawns

Toss prawns with oil, paprika, lime zest and salt. Cook in a hot skillet for 60 to 90 seconds a side, allowing smaller prawns to curl differently.

Fill at the last moment

Add cabbage, avocado crema and prawns to the crisp shells. Finish with torn coriander and eat immediately.
