Heat the oven to 180°C and line a 20 x 10 cm loaf tin. Toast cumin seeds in a dry pan for 60 to 90 seconds until fragrant.

Paneer holds its shape where softer cheeses disappear. Grate half finely to bind the batter, crumble the rest by hand and toast the cumin first so a short ingredient list still tastes deliberate.

Whisk eggs and ghee. Stir in grated paneer, almond meal, psyllium, baking powder, cumin and 1 teaspoon salt.
Fold in the crumbled paneer. Rest the batter for 6 minutes, then spoon into the tin without pressing the surface flat.
Bake for 38 to 42 minutes until browned in patches and firm through the centre.
Rest for 15 minutes before lifting out. Cool fully for slicing, then pan-toast in butter for the best texture.
