Paneer loaf

  • 300 gfirm paneer, half grated and half roughly crumbled
  • 5 large eggs
  • 130 gfine almond meal
  • 20 gfinely ground psyllium husk
  • 2 tspgluten-free baking powder
  • 2 tspcumin seeds
  • 50 gghee or melted butter

Toast the cumin

Heat the oven to 180°C and line a 20 x 10 cm loaf tin. Toast cumin seeds in a dry pan for 60 to 90 seconds until fragrant.

Build a thick batter

Whisk eggs and ghee. Stir in grated paneer, almond meal, psyllium, baking powder, cumin and 1 teaspoon salt.

Leave some paneer rough

Fold in the crumbled paneer. Rest the batter for 6 minutes, then spoon into the tin without pressing the surface flat.

Bake until the edges pull away

Bake for 38 to 42 minutes until browned in patches and firm through the centre.

Cool, then toast

Rest for 15 minutes before lifting out. Cool fully for slicing, then pan-toast in butter for the best texture.
