Roast sweet potato

  • 800 gsweet potato, cut into 2 cm cubes
  • 3 tbspextra virgin olive oil

Fajita chicken

  • 700 gskinless chicken thighs, sliced
  • 2 red and yellow capsicums, sliced
  • 1 red onion, sliced
  • 2 clovesgarlic, crushed
  • 2 tsp eachsmoked paprika and ground cumin
  • 2 limes, juice
  • 1 largeavocado, sliced
  • ½ cupfresh coriander

Roast the sweet potato

Heat the oven to 220°C. Toss sweet potato with 1 tablespoon oil and salt. Roast for 22 to 25 minutes until browned at the edges.

Season the chicken

Toss chicken with paprika, cumin, garlic, half the lime juice, 1 tablespoon oil and salt.

Char, do not stew

Heat a wide pan over high heat. Cook chicken in two batches for 5 to 6 minutes until browned and cooked through. Rest on a plate.

Keep the vegetables loud

Add remaining oil, capsicum and onion to the same pan. Cook hard for 4 minutes so the edges char but retain bite.

Build the bowls

Divide sweet potato between bowls. Add chicken, vegetables and avocado. Finish with pan juices, remaining lime and coriander.
