  • 1 tbspextra virgin olive oil
  • 30 gunsalted butter
  • 3 clovesgarlic, finely chopped
  • 60 gsun-dried tomatoes in olive oil, drained and sliced
  • 130 mlchicken stock
  • 200 mlpouring cream
  • 50 gfinely grated parmesan
  • 100 gbaby spinach
  • 1 cupfresh basil leaves, torn
  • 500 groasted cauliflower, to serve

Even the chicken out

Slice thick chicken breasts horizontally or pound them to an even 2 cm. Season firmly with salt and pepper.

Brown in the real pan

Heat oil and butter in a wide pan over medium-high. Cook chicken for 4 to 5 minutes each side until golden and just cooked. Move to a warm plate.

Use the fond

Lower the heat. Add garlic and tomatoes for 45 seconds, then stock. Scrape the pan and simmer until reduced by half.

Finish the sauce gently

Add cream and parmesan. Simmer for 3 minutes, then fold through spinach. Return chicken and its juices for 2 minutes.

Basil comes last

Take the pan off the heat and tear in most of the basil. Serve with roasted cauliflower and the remaining basil.
