Start with a hot tray
Heat the oven to 220°C with a large tray inside. Toss zucchini, capsicum, onion and tomatoes with oil, oregano, salt and pepper.

Halloumi tray bakes stay popular because they deliver contrast without a sink full of pans. Roast the vegetables first, then add the cheese late enough to brown without turning rubbery.

Tip vegetables onto the hot tray in one layer. Roast for 20 minutes, turning once, until the edges begin to caramelise.
Pat halloumi dry and tuck it between the vegetables. Roast for 10 to 12 minutes, turning the grill on for the final 2 minutes if needed.
Warm the brown rice, then fold through lemon zest, half the juice, parsley and a spoonful of the tray juices.
Spoon rice onto plates, add vegetables and halloumi, then finish with remaining lemon.
