A generous one-tray bake of crisp-edged chicken thighs, collapsed tomatoes, spinach and rough chunks of feta.

This is the low-effort cousin of stuffed chicken. Bone-in thighs roast over tomatoes until their skin is crisp, then spinach and feta join late so one wilts into the juices while the other keeps salty, browned edges.

Rub chicken with remaining oil, 1 teaspoon salt and pepper. Keep the skin clear of vegetables so it can crisp.
Roast for 30 minutes until the tomatoes collapse and chicken skin browns in uneven patches.
Tuck spinach into the hot juices and scatter over feta and olives. Roast for another 8 to 10 minutes until chicken is cooked and feta edges colour.
Rest for 5 minutes. Squeeze the roasted lemon over everything and spoon pan juices around the chicken.
