Salmon skewers

  • 700 gskinless salmon, cut into varied 3 cm pieces
  • 3 tbspgluten-free tamari
  • 2 tbsppure maple syrup
  • 1 tbspfresh ginger, finely grated
  • 1 tbspgarlic-infused olive oil
  • 1 lime, zested and juiced
  • ¼ cupspring onion green tops, thinly sliced

Make a two-part glaze

Stir tamari, maple, ginger, oil, lime zest and half the juice. Pour half into a clean serving bowl.

Coat briefly

Toss the salmon with the remaining glaze and leave for 10 minutes only. Longer marinating can soften its surface.

Use double skewers

Thread salmon onto four pairs of parallel skewers so the delicate pieces turn without spinning. Let naturally thin edges remain exposed.

Cook without fussing

Oil the barbecue plate and cook over medium-high heat for 2 to 3 minutes on each broad side, until lacquered and just opaque inside.

Finish cleanly

Rest for 2 minutes. Spoon over the untouched glaze, remaining lime juice and spring onion greens.
