Proper tzatziki gets its body from draining the cucumber, not gums or thickeners. Squeeze it hard, then fold it through the yoghurt so visible cucumber texture remains.

Tzatziki

  • 500 gthick lactose-free Greek-style yoghurt
  • 2 Lebanese cucumbers, coarsely grated
  • ½ tspfine sea salt
  • 2 tbspgarlic-infused olive oil
  • tbsplemon juice
  • ½ cupfresh dill, roughly chopped
  • ¼ cupfresh chives, finely sliced

Salt the cucumber

Toss grated cucumber with salt and leave in a sieve for 15 minutes.

Squeeze it properly

Wrap cucumber in a clean tea towel and squeeze firmly until no more water drips out.

Fold rather than blend

Stir yoghurt with infused oil and lemon, then fold through cucumber, dill and chives. Leave some visible herb and cucumber variation.

Rest and retaste

Chill for at least 20 minutes if time allows. Taste again for salt and lemon before serving.

Finish with one rough swirl

Spoon into a shallow bowl, make a loose well and add a little extra infused oil.
