  • 180 gunsalted butter
  • 180 gfine almond meal
  • 150 gcaster sugar
  • 55 gwhite rice flour
  • 6 egg whites
  • 2 lemons, finely zested
  • 120 gfresh or frozen raspberriesAbout 10 g per friand
  • 1 pinchfine sea salt

Brown the butter lightly

Heat butter until foaming and the first milk solids turn pale gold. Pour into a bowl and cool for 8 minutes.

Mix the dry base

Heat the oven to 190°C. Stir almond meal, sugar, rice flour, lemon zest and salt.

Whisk only to loosen

Whisk egg whites until frothy but nowhere near peaks. Fold into the dry mixture, then fold in warm butter.

Fill without matching

Divide between 12 greased friand or muffin holes. Press one or two naturally varied raspberry pieces into each.

Bake to uneven domes

Bake for 18 to 23 minutes until the edges are golden and centres spring back. Cool for 8 minutes before lifting out.
