Keep the mushrooms varied
Leave small mushrooms whole, halve medium ones and tear the largest into two or three pieces. Pat the halloumi dry.

Meaty mushrooms and salty halloumi with lemon, oregano and dark barbecue edges.

Mushrooms shrink as they cook, so pairing whole small caps with torn larger ones creates a kebab that looks and eats naturally. A little lemon goes on before grilling; the rest waits until the browned surfaces are safely formed.
Tick each step as you go. Built-in timers keep the important moments close.

Mix oil, garlic, lemon zest, 1 tablespoon juice and half the oregano. Toss through the mushrooms and halloumi.
Alternate ingredients on eight skewers. Leave a little space around mushroom caps so their moist sides can brown.
Cook over medium-high heat for 9 to 11 minutes, turning each face as it releases. Expect different mushrooms to wrinkle differently.
Squeeze over remaining lemon juice and tear over the remaining oregano immediately before serving.
