Cumin-rich lamb meatballs in a rough tomato sauce over buttery cauliflower mash. Familiar comfort food with more char and fewer beige fillers.

Almond meal replaces breadcrumbs without making the meatballs dense. Roll them lightly and deliberately vary the size; the small ones catch more sauce while the larger ones stay especially juicy.

Roll into 18 to 22 loosely packed meatballs of slightly different sizes. Brown in infused oil in two batches.
Add tomatoes and paprika to the pan. Return meatballs and simmer for 15 minutes until the largest is cooked through.
Steam cauliflower until tender, drain well and let it steam-dry for 5 minutes. Blend with butter, Parmesan and salt.
Spread rough cauliflower mash over plates, add meatballs and spoon over sauce and crisp pan bits.
