With the mixer on low, pour in cold cream a little at a time. Add vanilla once the mixture loosens.
Increase to medium speed and whip for 1 to 2 minutes until thick and softly holding its shape. Stop before it looks grainy.
Taste and add a little more powdered sweetener only if needed. Cocoa develops as it chills, so do not chase dessert-shop sweetness.
Spoon into four small glasses, cover and chill for at least 45 minutes. Finish with a restrained shaving of dark chocolate.
