Halloumi holds up beautifully over high heat, but it still deserves better than identical factory cubes. Tear or cut it into substantial, varied pieces, fold the zucchini loosely and give every surface enough room to colour.

  • 500 ghalloumi, cut into varied bite-sized pieces
  • 2 zucchini, shaved into thick ribbons
  • 1 red capsicum, cut into rough pieces
  • 2 tbspextra virgin olive oil
  • 2 tspdried oregano
  • 1 lemon, zested and cut into wedges
  • ½ tspcracked black pepper

Salt is already covered

Pat halloumi dry. Toss it with zucchini, capsicum, oil, oregano, lemon zest and pepper, but do not add extra salt.

Thread for movement

Thread onto eight skewers, folding zucchini ribbons loosely and turning the uneven halloumi pieces so broad faces remain exposed.

Heat the grill properly

Heat and lightly oil a barbecue flat plate or grill pan until a piece of halloumi sizzles immediately.

Brown in batches of faces

Cook skewers for 8 to 10 minutes, turning carefully as the halloumi develops deep patches and the vegetables blister.

Serve while squeaky

Rest for only 2 minutes, then squeeze over lemon and serve while the cheese is hot and tender.
