Banana bread

  • 350 gvery ripe bananas, roughly mashed
  • 3 large eggs
  • 80 mlpure maple syrup
  • 80 mlextra virgin olive oil
  • 180 gfine almond meal
  • 120 gcertified gluten-free oat flour
  • 2 tspgluten-free baking powder
  • 1 tspground cinnamon
  • 80 gwalnuts, roughly broken

Prepare the tin

Heat the oven to 175°C. Line a 22 x 12 cm loaf tin, leaving enough paper to lift the loaf out.

Keep some banana texture

Whisk eggs, maple and oil into the bananas. Leave a few small banana lumps instead of blending everything smooth.

Fold and rest

Fold in almond meal, oat flour, baking powder, cinnamon, a pinch of salt and two-thirds of the walnuts. Rest the batter for 10 minutes.

Bake until deeply golden

Scrape into the tin, scatter over remaining walnuts and bake for 50 to 58 minutes. A skewer should emerge with moist crumbs, not wet batter.

Let the crumb set

Cool in the tin for 15 minutes, then lift onto a rack. Wait until barely warm before cutting a thick, imperfect slice.
