  • 120 gcertified gluten-free oat flour
  • 2 large eggs
  • 250 gplain Greek yoghurt
  • 120 mlfull-cream milk
  • 100 mlpure maple syrup
  • 250 gfresh or frozen blueberries

Mix the dry bowl

Whisk buckwheat flour, oat flour, gluten-free baking powder, cinnamon and salt.

Mix the wet bowl

Whisk eggs, yoghurt, milk, maple syrup and olive oil.

Fold and rest

Fold wet into dry, add blueberries and rest the batter for 8 minutes.

Bake to split tops

Divide between 12 muffin holes and bake at 190°C for 20 to 23 minutes. Cool on a rack.
