Duck

  • 3 duck breasts, skin on
  • 1 tbspfresh ginger, finely grated
  • 2 tbspgluten-free tamari
  • 2 lime, zest and juice
  • 1 tsptoasted sesame oil

Lettuce cups

  • 16 baby cos lettuce leaves
  • 2 Lebanese cucumber, roughly diced
  • ½ cupspring onion green tops, thinly sliced
  • 1 cupmint and coriander leaves, torn
  • 1 tbsptoasted sesame seeds

Render the duck slowly

Score and salt the duck skin. Start skin-side down in a cold pan, then cook over medium heat for 10 to 12 minutes until deeply crisp.

Cook the flesh briefly

Turn and cook for 3 to 4 minutes. Rest for 8 minutes before chopping into rough, non-uniform pieces.

Make the dressing

Mix ginger, tamari, lime zest, lime juice and sesame oil. Toss with warm duck and any crisp skin crumbs.

Keep the lettuce cold

Separate and rinse leaves, then dry them well. Mix cucumber, green tops and torn herbs separately.

Fill loosely

Spoon duck into lettuce leaves, add the cucumber mixture and scatter with sesame. Serve the extras in the middle of the table.
