Heat the oven to 165°C. Line a 22 x 12 cm loaf tin and lightly oil the paper.

Stir in eggs and olive oil, then fold through feta and olives only until distributed. Do not crush them smooth.
Scrape into the tin and bake for 52 to 58 minutes until the centre is set and the top has rough golden patches.
Cool in the tin for 20 minutes, then transfer to a rack. Cut once fully cool and toast leftovers in a dry pan.
