Egg-white pancakes need two kinds of white: liquid whites for volume and dried egg-white powder for a batter that holds. Whip the foam properly, cook them covered over low heat and keep the first batch warm while you finish the rest.

Beat the remaining whites with cream of tartar to firm peaks. Fold the concentrate through in three additions without crushing the foam.
Heat a non-stick pan over medium-low and add a little fat. Spoon rough 9 cm pancakes into the pan, cover and cook for 3 minutes.
When the base is golden and the top looks almost set, flip carefully and cook uncovered for 90 seconds. Repeat with the remaining batter.
Stack loosely and add a small piece of butter while warm, or keep strictly dairy free with a little warm tallow and salt.
