Microwave the crust mozzarella and cream cheese in 30-second bursts until fully melted. Stir smooth, then immediately knead in almond flour, egg and oregano until uniform.
Place the dough between the baking paper and roll to a 28 cm round, about 5 mm thick. Remove the top sheet and prick the centre with a fork.
Slide the crust and paper onto the hot tray. Bake for 10 to 12 minutes until golden underneath. Turn it over carefully and bake for 3 minutes more.
Spread with sauce, mozzarella and pepperoni. Bake for 7 to 9 minutes until bubbling and browned. Rest for 3 minutes before slicing.
